4 Egg Whites (or 2 entire eggs)
1/3 C Cottage Cheese
1/2 Small Onion diced
1/2 Bell Pepper diced (Green, Red and/or Yellow)ï»¿
1/2 C frozen hash browns (optional)
2 breakfast sausage links (pre-cooked and frozenï»¿)
1 fresh tomato
Shredded Cheese (whatever you like)
Combine egg whites and cottage cheese and blend well with a blender. Set aside.
In a frying pan (preferably one with a cover), combine onions, peppers, hash browns, and sausages (cut into small pieces). Lightly saute at medium-high heatï»¿ for about 5 minutes or until lightly browned. Reduce heat to about 1/3. Dice the tomato into the pan over the other ingredients. Pour egg mixture into pan. Cover and let cook until eggs are completely cooked through. Sprinkle on desired amount of shredded cheese.ï»¿ Salt & Pepper to tasteï»¿.
