Breakfast Dish Recipe Request - French Toast A la Orange

This fabulous French toast is a loved dish by our guests. It's a great compliment when they ask for the recipe. Love the thought of them replicating their experience when they return home.

6 eggs

2/3 cup of Orange Juice

1/3 cup of orange liqueur (Grand Marnier or Orange Vodka)

1/3 cup of half & half

1/4 tsp of salt

1 tsp of pure vanilla extract

1 1/2 tsp of finely grated orange zest

12 1/2" slices of french bread

Threads of orange zest (garnish)

Confectioners Sugar (garnish)

Honey or Maple Syrup (topping)

Preheat oven to 170 degrees F. Place a oven proof cooling rack on cookie sheet. Lay slices of bread on cooling rack and place in the oven for 3 minutes. Turn slices over and return to oven for another 2 minutes. Bread should be dry but not completely dried out. In large bowl combined eggs, orange juice, liquor, half & half, salt, vanilla, & zest. Whisk together until the eggs are completely incorporated. Pour into 9x13" casserole pan. Set slices of bread in liquid. Allow to set 20 secs on each side. Turn bread over and repeat soak for 20 secs. Remove and place on cookie sheet. Keep chilled if not cooking directly. Heat griddle on medium heat until drops of water dance on heated surface. Coat griddle with cookie spray or butter. Place slices of egg soaked bread on hot griddle. Cook 3 minutes on each side until French toast is firm in center. Keep warm in 170 degree oven until ready to plate and service.

Suggested topping:

8 oz cream cheese

3 Tbsp of Orange Marmalade

1 tsp of vanilla

1 tsp of orange zest

Blend ingredients together . Serve French toast with a dollop of orange cream cheese in between layered slices.

Blueberry Simple Bliss

1/2 pint of fresh blueberries, washed & stemmed
4 Tablespoons of sour cream
1 teaspoon of pure vanilla extract
2 Tablespoons of brown sugar

Divide blueberries into 4 individual ramekins. In separate small bowl, mix sour cream and vanilla. Place a tablespoon dollop of sour cream mixture over each ramekin of blueberries. On top, place 1/2 tablespoon of brown sugar and lightly pat into sour cream. Place on top rack of oven and broil 3-4 minutes until brown sugar melts and caramelizes. Serve warm or chilled. Use caution if serving warm, ramekin will be hot. Note: Place cookie sheet or aluminum foil under ramekins to catch overflow.

Garden Fresh Omelet

Ingredients

4 Egg Whites (or 2 entire eggs)
1/3 C Cottage Cheese
1/2 Small Onion diced
1/2 Bell Pepper diced (Green, Red and/or Yellow)
1/2 C frozen hash browns (optional)
2 breakfast sausage links (pre-cooked and frozen)
1 fresh tomato
Shredded Cheese (whatever you like)

Instructions

Combine egg whites and cottage cheese and blend well with a blender. Set aside.

In a frying pan (preferably one with a cover), combine onions, peppers, hash browns, and sausages (cut into small pieces). Lightly saute at medium-high heat for about 5 minutes or until lightly browned. Reduce heat to about 1/3. Dice the tomato into the pan over the other ingredients. Pour egg mixture into pan. Cover and let cook until eggs are completely cooked through. Sprinkle on desired amount of shredded cheese. Salt & Pepper to taste.

Falling UpHill: Biking Around the World

In July I visited with author Scott Stoll. During my efforts to fundraise for the Bike MS150 Best Dam Bike Ride, our paths crossed on the Glacial Drumlin Trail. He was engaging cyclists with his stories of the cycling journey he had taken around the world. It was my luck to meet him as he has since allowed Pedal'rs Inn to sell his book with 33% of the sale going to Bike MS150.

I am enjoying my read through Falling Uphill, livng, in someways, vicariously through his entries. I love the never ending perseverance and exuberance in his mission. My favorite part is when he meets a man who tells him "You have been around the world, and you have seen God's glory direct. You are a witness to God and his creation." It was a search for his happiness and self-exploration with experiences far beyond what he imagined.

You're Grrrrrrreat! The 5th Annual Free Bike BS 150 Lawn Concert was a great success because of you we raised $1500 and still going! Sunday's sunrise brought the sun and the heat but didn't keep our dedicated volunteers and diehard supporters away. The afternoon lawn was filled with many who came to enjoy the music from the Bicycle Doctor's group, Off the Grid. The sweet notes from Deb Aukofer & Tom Klein took our minds off the heat of the day. The shade of the red maples kept us covered from the blaze of the sun as well. Besides the spectators and our musicians, bikes, bikes, were everywhere. Yes, once again we did our part to make this a green event. Thanks to our anonymous donors, Power by the People Productions provided stationary bikes for crowd participation. Through you're strong legs and pedal power, we protected our environment while raising funds for the cure for Multiple Sclerosis. Prizes were given to those willing to provide human power. A thank you goes out to State Farm Insurance & Clark Chiaverotti, Town Bank of Wales, Pizza Guy, Back to Bread Bakery who provided the concert with prizes. There was one thing missing from Pedal'rs Inn that day and it was the mosquitos thanks to the crew at Green Appeal. Our weekend guests returned for another visit and we so enjoy them & how lovely they all are. Pedal'rs Inn decided to surprise our guests with a special treat. Before there was digital and internet, there was the beauty of black and white photography. This 1910c photo of Wales, Waukesha County, WI, shows the Chicago Northwestern Line which is now the Glacial Drumlin State Trail. The line transported both passengers and materials. The house on the far right is the Elias House which is now Pedal'rs Inn Bed and Breakfast, offering hospitality to travelers and continuing the age-old tradition.

It's hard to pass by and not "stop inn". Privately owned with family recipes, they make your experience memorable. Who cares about the low fat content, ME! In 2009, I experienced my first team ride in the MS 150 Bike Ride with the riders from the Waukesha YMCA. Our team captain, Cyndi Cahill has lead the Y-ders Team in training, fundraising and "friend"raising. This is a great group of people with servants' hearts and character beyond compare. Come join in our group rides in preparation for the MS 150 ride. You do not have to be a member of the "Y" to join. We are riders of all levels and celebrate the strength that we have to keep moving to create a world free of MS. Join the movement. I did. That's me in the middle of the pack, right behind the yellow jerseyed rider. Yellow Jerseys represent those who raise over $1,000.

Unique Review From Guests! When guests check-in at Pedal'rs Inn Bed and Breakfast, they will usually find on our game table a "Welcome" note played out in Scrabble words. During their stay, they even add to our Scrabble board. The best was during the Harley Davidson 105th. I was delighted to see this unique review left behind for me to find this weekend, simply put "We had a great time!" One couple were repeat customers, who brought along friends, & together enjoyed hiking for an anniversary celebration. They toasted to their happy years while taking a break from hiking and sipped wine amongst the pine trees.

Back by popular demand the Free Lawn Concert for the MS 150 Bike Ride. Meetings, calls & plans are being made to bring back to you the event that pumps Waukesha up for the National MS 150 Bike Ride. The 150 mile 2 day ride starts at WCTC, overnight in Whitewater and finish line in Madison is on August 7-8th.
